  • The product acts as a defense system against fungal infection.

Oleuropein + H(2)O = oleuropein aglycone + D-glucopyranose.
  • Oleuropein is a glycosylated secoiridoid exclusively biosynthesized by members of the Oleaceae plant family where it is part of a defense system againt herbivores.
  • The enzyme also hydrolyzes ligstroside and demethyloleuropein.
